Timeline: After her death, when the Batter can find her after he has cleared Zone 2.

wiki twoCharacter History: Sucre is a character who is optional to find throughout the game. It's likely that the player (or puppeteer, as Zacharie calls them) may not even find her in the game as she is a hidden boss in the first Zone that you begin the game in, but can only be found after one of the other Zones has been cleared by the Batter. As such, not much is really known about her.
When the Batter enters Zone 0 again, he can go into the basement where he'd once done a puzzle. When he goes in, he finds Sucre, who is surrounded by piles of sugar. It's assumed that she has some relation to Enoch as his Zone is the one that produces sugar, though this is only speculation as nothing has ever been confirmed by Mortis Ghost, the creator of OFF.
When Sucre is first encountered, she merely begins with "..." , as though she is surprised that she has been found by the Batter. This may be apt due to the fact that The Judge later claims that the basement had been created to hide Sucre and his brother, Valerie. As such, she may have been genuinely shocked that the Batter thought to come back to Zone 0 and that he somehow managed to find her hiding spot, presumably so she wasn't "purified", or killed, by the Batter in his mission to ensure complete purity of all the Zones. Sucre then says "I'm ignoring... Why everything's so frightening", adding to the thought that she was hiding there from the Batter, who is the frightening thing going around and attacking everything and everyone.
Sucre tells the Batter in their conversation to "think of something beautiful really hard, and maybe you will see it tomorrow", which gives an idea that she is a positive character or merely wants beautiful things to be seen in the world rather than merely the frightening which she has suddenly been surrounded by with the arrival of Batter. However she then goes on to call the Batter a 'huge frightening ducky' which a) could make it seem as though she has clouded vision, that perhaps she is on a high because of all the sugar she is surrounded with and presumably eats or b) she sees the Batter's final Evil form, of which he is a huge duck-like monster. Either way, Sucre is seeing the Batter for what he really is, though whether it is because of either theory is unknown.
It can be assumed that Sucre has accepted her fate when the Batter finds her, as she says "let's not waste any time to useless introductions. Let's dance, my dear friend", which is when they begin the battle. Sucre is apparently resigned to the fact that she must fight this hideous monster who has been destroying her home, and thus rather than wasting time or trying to stall, she begins the fight immediately.
Her references to dancing could be her way of thinking of battles instead, an easier way of claiming them rather than calling them fights as it seems more elegant and kind. Sucre is the most difficult boss fight in the game, which gives the idea that she is an apt fighter and that, although she calls it "dancing" rather than battling, she has had experience and practice. When she's defeated, she says she doesn't "like that dance :-(", perhaps merely because she has lost.
Sucre uses emotes when she speaks, :-) and :-(, which is unusual but can be used in text rather than actually speaking, since unless she's saying colon dash bracket out loud is quite unusual.
After her defeat, Sucre asks the Batter to "say goodbye to Zacharie" for her, which, although we don't know what their relationship is specifically (apart from mother/son, which Mortis Ghost has already disclaimed), it could be anything else.
Abilities/Special Powers: Sucre has various battle competences (attacks) in the game.
Quatre Quarts (English translation: Four Quarters or Poundcake) - physical attack
Hard-Bitten Caramel - physical attack, may also cause palsy. (target's CP freezes and cannot attack)
Mille Feuilles (English translation: Thousand Leaves or Napoleon) - may cause target to become furious (target attacks on its own accord)
Dame Blanche (English translation: White Lady, an ice-cream based dessert) - physical attack, may cause madness (target inflicts damage on itself)
Parfait au Chocolat (English translation: Chocolate Parfait, once again, a dessert) - multi-hit physical attack
Third-Person Sample: Sucre isn’t sure how long it’s been since she was put in the basement. Although it’s for her own safety, the fact that all these frightening things are happening outside – it doesn’t make her feel safe, nor does it make her feel comfortable in the fact that she could be found at any minute. The Judge assured her quite firmly that this was for her own safety, that the frightening thing was on a mission and wouldn’t bother to look back and find her, Sucre has her doubts.
After all, retracing your steps is a simple idea. Just to make sure you have everything covered, that you managed to finish what you had started in all the zones. And although Zone 0 doesn’t have much in it, the fact that there wasn’t anything? It wouldn’t sit well with someone who is trying to purify the whole world of everything her perceives as a sin. Zacharie might be a good distraction (and the thought makes her frown even harder, even as she nibbles on a rock of pure sugar), but even he couldn’t hold off everything that’s frightening in the world forever, as much faith as she might have in her friend.
Perhaps it’s inevitable that she be found, hiding away in a basement and wishing that she could dance – really dance – with her friends, rather than sit here doing nothing. Perhaps it’s inevitable that one day she looks up, expecting it to be Zacharie or the Judge coming to tell her that the frightening ducky has left, but instead finding it to be the ducky, his bat held up and ready to destroy everything she’s ever known.
Perhaps it’s inevitable that she be frightened, but ready to fight, and even more inevitable that she falls to the bill of the bat, and doesn’t recover. It’s cold, and she wishes she could have another bite of sugar, she wishes that she could see Zacharie’s mask again, or the Judge’s adorable kitten face, or even one of the Elsen’s. Instead all she sees is the huge ducky, the Batter, and the impassive look he has on his face.
“Say goodbye to Zacharie for me.”

( the video is swivelling around, and it's hard to tell where she is by the speed that it's going and camera's inability to keep up with her. sometimes a hand might be seen, or black and white tights, but otherwise — that's it. )
There isn't a ducky in sight. ( she sounds quite disappointed, and settles herself from the constant movement of swinging the device around. finally it settles, and it's just a bedroom. a simple one that a new arrival might be given. she settles on the bed and everything seems to have finally calmed down. but it doesn't last long as the camera turns to her instead, her unusual face smiling down at the camera - a benevolent smile stretching her lips wide. )
I heard that monsters could follow you here. ( she leans in quite close then, and whispers as though she's sharing a secret with everyone who's listening. ) My monster is already here, and I think he's ready to dance with me.
